Raw Candy Apples

This school year, one of our main goals is to teach our students about healthy living initiatives.  We were inspired by the success of our summer camp, and we decided to extend those lessons to our afterschool program:  trying new recipes, offering creative movement classes, and inviting guests from the community to share their knowledge with our students.

One such community member is Gail Manker, who we met through the Ujamaa Collective.  She visited with all of our students, teaching them how to make Raw Caramel Apples. One of the best things about her visit was that she encouraged our students to try each ingredient, and if they didn't like it, they had to say something polite (aka "This is nasty" was not acceptable). Many of the ingredients were new to our students:  coconut oil, dates, sunflower butter and agave nectar.

Raw Caramel Apples Recipe
from www.forkandbeans.com
{Raw Vegan} Gluten, egg, dairy, and refined sugar-free
Makes 2 apples

 Date Caramel Sauce

  1. In a high speed blender, combine all ingredients (dates, water, coconut oil, nut butter and agave) until completely smooth. Will take about 5 minutes total. If you are having difficulties blending, simply add more water by the teaspoon full until it smooths out.
For the Raw Chocolate Sauce:  Mix all of the ingredients listed above for the sauce (coconut oil, cocoa powder, maple syrup and salt)  in a bowl and keep at room temperature.  Any leftover sauce can be refrigerated.

DIRECTIONS:

  1. Gently remove the core from the apple with a knife. Insert stick into apple.
  2. Using a knife, cover the apples evenly with the date caramel sauce.
  3. Roll around in chopped nuts.
  4. Drizzle with raw chocolate.
  5. Chill in the fridge for 15 minutes until the apples set.
