Cooking Demos with Farm Truck Foods

This summer the Brashear Association partnered up with the new Farm Truck Foods program and together we hosted several healthy food cooking demos. It was a great opportunity for our community in Allentown  to see easy, healthy recipes created right in front of them. With the help of Farm Truck Foods, people were able to purchase low cost healthy foods and cook them at home. Workers from Farm Truck Foods came and did three cooking demos with our community in Allentown. For three consecutive weeks, families were able to come and observe while cheap, healthy food was prepared right before their eyes! Below are some easy and very healthy recipes that you can make on a budget.

Kale Parmesan Pasta

1/2 lb kale 
1/2 lb whole wheat pasta
2 Tbsp Olive Oil
2 Tbsp butter
2 cloves garlic, minced
salt & pepper
1/4 C Parmesan
pinched red pepper flakes (optional)


Bring a large pot of water to a boil and add pasta. While the pasta is cooking, add the olive oil, butter, and minced garlic to another large pot or skillet. Add the kale and continue to sauté until the kale has wilted. Toss the pasta and kale together.Add the grated Parmesan cheese and toss to coat. Add a pinch of red pepper flakes over top if desired.



Broccoli & Cheese Quesadilla

11oz broccoli florets 
2 T unsalted butter
4 burrito size tortillas
2 C shredded cheese

Cook time: 5 minutes 

Steam the broccoli in pot. While steaming the broccoli, butter the tortilla on one side and place in a skillet. Top the tortilla with shredded cheese and the broccoli. fold the tortilla in half and cook on both sides until golden brown. 


Banana & Peach Smoothie 

2 Bananas
 1 1/2 Cups Peaches
1/2 Cup Yogurt 
1 1/2  Cups Dairy (Milk)
1/2 Cup Ice

Combine all of the ingredients inside a blender and then ... ENJOY!One of the easiest and healthiest recipes to make, smoothies are great for an on-the-go snack.
