Pineapple Nog Recipe
At Allentown Academy, we have started incorporating food lessons into our studies on Haiti. We have Haitian "Picture Pals": students in Haiti that we are going to exchange artwork with. Our correspondence has been arranged by an organization called Haitian Families First. To appreciate Haiti, we wanted to make some recipes from the country. Our first food project is a Haitian holiday drink, Pineapple Nog.
This is a simple recipe that makes a refreshing drink, and a healthier substitute for egg nog. It's a little like a non-alcoholic Piña Colada, with a touch of festive nutmeg. We also baked a batch of Pain Haïtien, or Haitian bread and served it along with the drink.

Pineapple Nog
Ingredients:
-1 can crushed pineapple (20 oz can)
-1/2 cup coconut milk
-1 cup milk
-1/8 tsp nutmeg, plus additional for topping
Directions:
1. Combine all the ingredients in a blender and mix well.
2. Top the drink with additional nutmeg.
Serves 4 to 6.
We made the Pineapple Nog with our students at Grand View Elementary. They enjoyed measuring and pouring the ingredients. We made several batches so everyone could have a turn helping.
We grated whole nutmeg, which fascinated our students to learn where a spice like nutmeg comes from. Just be careful when grating the nutmeg over your blender, because the nut slipped and fell into the mixture a few times. Luckily nutmegs float so we were able to fish it out.
The Pineapple Nog was received very well. Many of our students asked for seconds. It tasted surprisingly like egg nog, and also makes great nog mustaches. Happy Holidays!
